The best way to begin this project is of course to start where it began for me. Two years ago, 2018, the first time I decided to buy a bottle of this price (155€) in the Corman Collins shop in Belgium, not far from my home. This was his brand new bottling, a 15 year old Diamond 2003. And the magic happened !

Colour : Dark, coffee.
Nose : Cocoa, dried fruits, hazelnut, coffee beans, milk chocolate, licorice, a bit of cinnamon, it’s fresh and a bit fruity in the background. It doesn’t smells like any another DDL but in 2018 I wasn’t knowing it !
Mouth : It’s thick and heavy! Alcohol well integrated, burnt caramel, ristretto, slightly bitterish, roasted dried fruits, a bit woody, everything match perfectly. This is not the same coffee style you can taste in an Enmore for example
Finish : Long, bitterish cocoa, sweet capuccino. I can’t wait to go back to this glass !

When I want to drink a Demerara rum, it’s exactly what I want in my glass, we all have at least one bottle we’ll remember forever, mine is this one for sure. Thanks Hubert, awesome job!
